Each release, I will be writing a few recipes under a certain theme for you guys to try out. For our first release, I decided to go with a classic: pizza. I hope you enjoy eating these as much as I enjoyed testing the recipes!


1. For when you're too hungry to wait for the Deliveroo

Serves 1

Note: for a more substantial pizza, replace the aubergine with pitta bread but don't bake it before adding toppings.


1 small aubergine

Olive oil

Passata

Mozzarella / dairy free cheese

Toppings of choice (optional)

Salt and pepper

Fresh basil (optional)


Preheat the oven to 220oC fan.

Slice the aubergine lengthways into pieces of 1cm thickness.

Lay them on a tray lined with baking parchment, drizzle them with a tiny bit of olive oil and bake for 10 minutes, flipping them halfway through.

Take them out of the oven and on each slice, spread around 1tsp passata (you may need more or less).

Top with cheese and any other desired toppings and then add some olive oil, salt and pepper on top.


Bake the aubergine for 10 more minutes or until the cheese is melted and golden. Top with fresh basil leaves and serve immediately.


2. For when the only food in your fridge is last night's takeaway


Serves 1


Olive oil

2 slices of leftover pizza

Mozzarella


Drizzle a tiny bit of olive oil in a toasted sandwich press or non-stick frying pan.

Place one of the slices face-up in the pan and tear some extra mozzarella on top.

Add the other slice face-down and add another drizzle of olive oil.


Cook the sandwich until hot and crispy, flipping it halfway through


3. For when one Italian dish just isn't enough


Serves 1


100g penne

1/2 cup tomato sauce

Mozzarella, torn / dairy free cheese

Parmesan, grated

Toppings of choice (optional)

Olive oil

Salt and pepper

Fresh basil (optional)


Preheat the oven to 220oC fan.

Cook the pasta in salted boiling water for 6-8 minutes. It shouldn't be completely cooked.

Transfer it to an overproof dish and pour over the tomato sauce, adding more if necessary. Add half of the mozzarella and toss it through. Flatten out the pasta mixture.

Place the rest of the mozzarella on top with your chosen toppings and then sprinkle over the parmesan.

Drizzle olive oil over the top and add salt and pepper to taste.

Bake it in the oven for 15 minutes or until the bake is crispy and golden.


Top with fresh basil and serve.
